Do not put all the fritters in the pan at once, this will make oil temperature drop, just put a few at a time. Remember that when oil is not at high temperatures flour absorbs it more easily. Try small shrimps, even if they are minced.
- Chopped flat-leaf parsley (1 tablespoon)
- Finely chopped scallion (3)
- Flour, preferably chickpea (1 ˝ cups)
- Olive oil (as much as needed for deep-frying)
- Small peeled shrimps (half-a-pound)
- Sweet pimenton (˝ teaspoons)
Mix all the shrimp with water to cover and boil it over high heat in a saucepan, remove from the fire as soon as the water starts boiling, immediately remove the shrimp from the water, cover it and put it in the fridge. Pick a cup of that boiling water and let it cool.
Mix the parsley, scallions and pimenton with the flour in a bowl in order to get the batter. Add the cup of water together with a pinch of salt, then mix well and once you get the right texture cover the batter and put it in the fridge and get the shrimp out. Keep the batter in the fridge for one hour.
Mince the shrimp making sure the pieces are not thicker than coffee ground, get the batter, if an hour has passed by, and mix it with the shrimp. Mix well.
Pour olive oil into a heavy saucepan (about 1 inch) and heat until the olive oil almost smokes. Add one tablespoon of batter for each fritter. Flatten the batter round in the oil with your spoon and remember to make room among the batter.
Fry each side of the batter for no more than a minute or until the batter is golden color and crispy. Remove the excess of oil and keep at low heat. Serve immediately.
